Special Selection Olive Oil
Coupage of the varieties that grows in Valdezarza: Hojiblanca, Cacereña, Picual, Cornicabra y Arbequina. A balanced oil, with an excepcional and armonic aroma, of marked personality, with sensations lightly piquant and a slight bitterness, with the peculiarity that gives it the content in Manzanilla Cacereña. This variety of the olive for the table nevertheless provides with a few characteristics more than peculiar to our oil of selection.
Single-variety Olive Oil
Of sweet and soft flavour, the notes of flavour of this variety are especially valuable in our oils. This tree though it is typical of other zones, not only it is totally adapted to our lands but it has obtained that its exquisite fruity notes are more powerful that in the zones from which this variety comes. With flavour to almond and apple, it does this single-variety produced by Valdezarza absolutely peculiar.
Perfect to use in toasts, carpaccios, marinade as well as any dressing or use on its own.
The most notable characteristics of this olive variety are its bitterness, and its irritation. The early crop which we do in Valdezarza makes more valuable the herbaceous notes of this variety (grass, fig tree, tomato and tomato plant).
Picual oil is a basic in any kitchen, perfect for its consumption on its own, gazpachos, salads, salmorejos, etc. Though also it is very resistant to high temperatures which also make it the most indicated for the fried foods.
